This delightful Italian-inspired dish combines pillowy gnocchi with rich sun-dried tomatoes and fresh spinach. Perfect for a quick weeknight dinner or a satisfying lunch, this hearty yet refreshing salad is sure to please.
Ingredients:
- 1 lb (450g) gnocchi
- 1 cup (60g) julienned sun-dried tomatoes
- 2 cups (60g) fresh spinach, roughly chopped
- 1/4 cup (60ml) extra virgin olive oil
- 2 cloves garlic, finely minced
- 1/4 cup (25g) grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- 2 tbsp pine nuts for garnish (optional)
How to make Gnocchi Salad:
- Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.
- Prepare the Sun-Dried Tomatoes: If using oil-packed sun-dried tomatoes, drain and slice into strips. For dry-packed tomatoes, rehydrate in hot water for 10 minutes, then drain and slice.
- Sauté the Garlic: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Combine Ingredients: Add the sun-dried tomatoes to the skillet and cook for 2-3 minutes. Then add the cooked gnocchi, tossing to coat with the garlic and oil mixture.
- Wilt the Spinach: Stir in the chopped spinach and cook until just wilted, about 1-2 minutes.
- Season and Serve: Season with salt and pepper to taste. Transfer to a serving dish, sprinkle with grated Parmesan cheese, and garnish with pine nuts if desired.
