Healthy Zucchini Pizza Skillet: A Quick Recipe That Will Win You Over…
If I were asked to list my top 5 favorite dishes, pizza would definitely be among them… and since, alas, it is not possible to eat it every day, I am always looking for lighter but at the same time tasty alternatives. That’s why today I want to share with you the recipe for pan-fried zucchini pizza, a fresh, tasty alternative and what’s more ready without using the oven!
Ingredients:
- 2 medium zucchini (courgettes)
- 45g (1/3 cup) potato starch or cornstarch
- 50ml (3 1/2 tablespoons) egg whites
- 200g (7 oz) tomato sauce
- 200g (7 oz) provola cheese (or provolone)
- 10 fresh basil leaves
- Salt, to taste
- Extra virgin olive oil, as needed
How to Prepare Healthy Zucchini Pizza Skillet:
- After washing the zucchini, grate them with a large-hole grater, then place them on a clean tea towel.
- Squeeze the grated zucchini until excess water is removed.
- In a bowl, combine the grated and squeezed zucchini with the starch, egg white, and salt and mix until firm.
- In a hot frying pan put a drizzle of evo oil, distribute the zucchini mixture evenly and cook for about 5 minutes. After this time has elapsed, turn the base with the help of a plate or lid.
- At this point, add the tomato sauce and slices of provolone cheese, cover with lid, lower the heat and let cook until the cheese melts.
- Transfer to a serving plate and finish with fresh basil previously washed and dried and, if desired, a drizzle of raw evo oil.
