  1. First, in a tall pot with plenty of salted water, parboil 5 potatoes for 7 minutes.
  2. Meanwhile, in a frying pan with a bit of vegetable oil, sauté two courgettes cut into small cubes for 7 minutes over medium heat.
  3. Then, add finely chopped onion and 150g of diced bacon. Cook for another 5 minutes, and season with a pinch of salt and black pepper.
  4. In a bowl, beat 3 eggs with 4 tablespoons of flour. Add the sautéed ingredients from the pan and the parboiled potatoes cut into cubes.
  5. Season with a pinch of salt and paprika, mix well, and fry spoonfuls of this mixture in a pan with a bit of vegetable oil over medium heat, as shown in the image.
  6. The delicious potato fritters are now ready to be served.
