A Potato Recipe You’ll Want to Repeat Multiple Times a Week
Although many people often consider potatoes as a side dish, they actually have all the qualities to stand as a main course in their own right. The reason for this is quite simple.
Ingredients:
- 5 potatoes
- 2 courgettes
- 1 white onion
- 3 eggs
- 150g (5.3 oz) bacon
- Plain flour
- Salt
- Black pepper
- Vegetable oil
How to make Irresistible Pan-Fried Potato Fritters:
- First, in a tall pot with plenty of salted water, parboil 5 potatoes for 7 minutes.
- Meanwhile, in a frying pan with a bit of vegetable oil, sauté two courgettes cut into small cubes for 7 minutes over medium heat.
- Then, add finely chopped onion and 150g of diced bacon. Cook for another 5 minutes, and season with a pinch of salt and black pepper.
- In a bowl, beat 3 eggs with 4 tablespoons of flour. Add the sautéed ingredients from the pan and the parboiled potatoes cut into cubes.
- Season with a pinch of salt and paprika, mix well, and fry spoonfuls of this mixture in a pan with a bit of vegetable oil over medium heat, as shown in the image.
- The delicious potato fritters are now ready to be served.
