Lemon Tiramisu: A Soft, Light, and Fragrant Dessert…
Who said that in summer you only eat ice cream? Today I want to propose you a dessert so fresh and fragrant that you will fall in love with it and with you all the people you will make it to taste it, I guarantee it! I am talking about a tiramisu different from the usual… lemon tiramisu! Starting from the filling to ending with the sauce for the ladyfingers, in short the lemon aroma will explode in your mouth from the very first bite!
Ingredients:
- 500 ml (2 cups) soy milk
- 1 lemon
- 2 eggs
- 2 tablespoons all-purpose flour (plain flour)
- 70 g (2.5 oz) powdered sugar (icing sugar)
- 300 ml (1¼ cups) plant-based whipping cream
- 250 ml (1 cup) water
- 150 g (¾ cup) granulated sugar
- 1 small cup (about 60 ml or ¼ cup) Limoncello liqueur
- 200 g (7 oz) ladyfingers (sponge fingers)
How to Prepare Lemon Tiramisu:
- Make the vegan custard with soy milk, lemon zest, eggs, flour and vanilla powdered sugar. Put everything in a saucepan and stir vigorously over medium-low heat until it thickens well.
- Now whip some soy vegetable cream with electric whips (chill the cream and bowl in the refrigerator before whipping everything), then combine it with the well-chilled custard, finally put everything back in the refrigerator to firm up well.
- Prepare the alcoholic sauce for the ladyfingers: melt the sugar in the water, then turn off the heat and add the limoncello, mix well and chill well in the fridge as well.
- After chilling the diplomatic cream and limoncello bath we can assemble everything in an oven dish: first we spread a layer of cream, then we arrange the ladyfingers well soaked in the cold bath, one more layer (generous) of cream, finally some lemon zest, then we complete with a last layer of ladyfingers and cream with final lemon zest. We let everything rest in the refrigerator for at least 2 hours before serving, even better if it rests for about half a day!
- We are ready to sink our spoon into this dessert and enjoy it in all its meltiness!
