Mac And Cheese: EXTRA cheesy!

Mac And Cheese…
There’s something universally heartwarming about a bowl of creamy, cheesy mac and cheese (or macaroni cheese, as it’s known in the UK). This timeless dish, loved by children and adults alike, combines the rich flavors of cheese with perfectly cooked pasta, creating a comforting meal that warms both the body and soul.

Ingredients:

  • 225g (8 oz) elbow macaroni
  • 45g (3 tbsp) butter
  • 45g (3 tbsp) all-purpose flour
  • 475ml (2 cups) milk
  • 225g (2 cups) shredded/grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)

How to make Mac And Cheese:

  1. Cook the macaroni according to package/packet instructions in a large pot of salted boiling water. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Once melted, add the flour and stir constantly for about 1-2 minutes to create a roux.
  3. Gradually whisk in the milk, ensuring no lumps remain. Continue cooking and stirring until the mixture thickens, about 5 minutes.
  4. Reduce heat to low, and add the shredded/grated cheddar cheese to the pot, reserving some for topping if desired. Stir until the cheese is melted and the sauce is smooth.
  5. Season the cheese sauce with salt, black pepper, garlic powder (optional), and paprika (optional). Adjust seasoning to taste.
  6. Add the cooked macaroni back into the pot with the cheese sauce. Stir until the macaroni is evenly coated.
  7. If desired, transfer the mac and cheese (macaroni cheese) to a baking dish/ovenproof dish, sprinkle the reserved cheese on top, and broil/grill for a few minutes until golden and bubbly.

Serve hot as a comforting main dish or side.
