The zucchini and vegetable pizza is an excellent dish, healthy and nutritious to serve for lunch or dinner. This savory pizza made with zucchini, bell peppers, and carrots is a tasty and healthy dish that offers numerous benefits. Here are some of the main advantages of using these vegetables and preparing this savory pizza.

Zucchini, bell peppers, and carrots are rich in vitamins and minerals. For example, zucchini provides vitamin C and potassium, bell peppers are excellent sources of vitamin A and antioxidants, while carrots are known for their beta-carotene content, which is beneficial for eyesight and skin.

Ingredients :

  • 110g (3.9 oz) flour
  • 1 zucchini (courgette), trimmed and sliced into half-moons
  • 1 carrot, peeled and cut into strips
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper (green is also fine), cut into strips
  • 1 onion, chopped
  • 200ml (6.8 fl oz) milk
  • 150g (5.3 oz) grated light cheese (like reduced-fat cheddar)
  • 20ml (1.4 tbsp) extra virgin olive oil + extra for greasing the pan
  • 4 eggs
  • 2 sprigs of basil, torn
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons salt + extra to taste
  • Chopped parsley to taste
  • Black pepper to taste

How to make Low-Calorie Vegetable Pizza Bake:

  1. First, pour 20ml (1.4 tbsp) of extra virgin olive oil into a non-stick pan, add the chopped onion and minced garlic, mix well, and let them brown.
  2. Add the peeled and sliced carrot, stir, let it sear briefly, then add the sliced bell peppers, mix, and let them soften.
  3. Now incorporate the trimmed and sliced zucchini, season with salt and pepper, mix, cover with a lid, and let it cook for 6-7 minutes. Add the torn basil leaves, stir, and turn off the heat.
  4. Line a baking tray with parchment paper, grease it with a drizzle of olive oil, spread the sautéed vegetables on it, and set aside.
  5. In a bowl, beat the eggs with 1/2 teaspoon of salt and pepper. Add the milk, flour, and baking powder, and mix well until you get a smooth batter.
  6. Pour the batter evenly over the vegetables in the tray, level it out, then bake in a preheated oven at 375°F (190°C) for 25 minutes.
  7. Finally, sprinkle the surface with chopped parsley, top with grated cheese, and bake for another 10 minutes at 375°F (190°C). When done, cut the savory pizza into slices and serve.
