Apple pie is not my favorite dessert but it is definitely my all-time favorite homemade pie ! The scent of caramelized apples combined with the scent of vanilla, cinnamon and lemon zest make me feel at home no matter where I eat this cake! Just because of its fame this cake knows several versions and each family has its own tricks or special ingredients to make it taste better. Today, however, I want to both reveal to you my favorite recipe to make it perfectly fluffy and moist. But, surprise, I am going to show you how to prepare it without an oven, by simply baking it in a nonstick pan over a gentle heat! So here is the recipe for making a pan cake without an oven!

Ingredients :

  • 1 egg
  • 50g (1/4 cup) granulated sugar
  • 50g (3 1/3 tablespoons) soy milk
  • 50g (3 1/3 tablespoons) extra virgin olive oil
  • 100g (3/4 cup) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 organic lemon
  • Ground cinnamon, to taste
  • 1 ripe apple
  • Powdered sugar (icing sugar), for dusting

How to Prepare Pan-Cooked Apple Cake:

  1. Whisk the egg with the sugar, add the lemon zest, cinnamon and soy milk.
  2. Now add the EVO oil, lemon juice (drained from the macerated apples) and mix with the whisks, then complete with the sifted flour and baking powder. When all the ingredients are well blended (you can use either a planetary mixer or electric whips as I did) the dough is ready!
  3. Oil a nonstick pan, dust it with caster sugar and arrange the drained sliced apples concentrically. Pour over the dough, cover with lid and cook on low heat for 10 minutes. Then turn it over: lay a sheet of parchment paper over the cake, turn it upside down in the lid and then slide it into the pan on the side with the parchment paper, cook it on this side for 10 minutes as well.
  4. Let the cake cool in the pan covered with a dish towel, then serve it on a serving plate and top it off with powdered sugar to enjoy it at its best!
