- 1 lb (500g) potatoes
- 2 oz (60g) grated Parmesan cheese
- Extra virgin olive oil, as needed
- Salt, to taste
How to Parmesan Potato Bites:
- Peel, wash, and cut the potatoes into pieces. Boil them in salted water for about 20 minutes. Test doneness by piercing with a fork.
- Drain the potatoes and mash them in a bowl using a potato ricer or masher.
- Add a pinch of salt and the grated Parmesan cheese. Mix well with a fork.
- Form the potato mixture into small balls by taking a small portion and rolling it between your palms.
- Place the balls on an oiled baking sheet.
