Pasta with Anchovy Cream: recipe cheap and easy…

PASTA WITH ANCHOVIES CREAM and fried bread a recipe that may sound difficult but actually to prepare it took me about 10 minutes and with all the ingredients I already had in the house without even going to the grocery store but served to a couple of our friends who arrived at the last minute and also stayed for dinner.

Ingredients :

For the anchovy cream:

  • 3.5 oz (100g) oil-packed anchovies
  • 1.8 oz (50g) bread
  • 1/3 cup (70ml) milk
  • 3.5 tablespoons (50ml) extra virgin olive oil
  • 1 tablespoon pine nuts
  • 1 garlic clove

For the pasta:

  • 12.7 oz (360g) pasta
  • 2.1 oz (60g) bread
  • Fresh parsley
  • Extra virgin olive oil
  • Coarse salt

How to make Pasta with Anchovy Cream:

  1. Drain the anchovies in oil from the oil in the jar and place them in a blender.
  2. Add the pine nuts, garlic clove peeled and stripped of its central core, parsley, and chopped bread.
  3. Start blending. Add the extra virgin olive oil and continue blending. Also add the milk and blend until smooth.
  4. Crumble the bread leaving some larger ones and some smaller ones.
  5. Heat two tablespoons of extra virgin olive oil in a skillet and brown the bread crumbs over high heat until golden brown.
  6. Remove the toasted bread crumbs from the pan and keep them aside.
  7. Cook the pasta in plenty of lightly salted water.
  8. Drain the pasta al dente directly into the pan with the anchovy cream.
  9. Stir and mix all the pasta.
  10. Serve on plates with the toasted bread crumbs and freshly chopped parsley.
