Potato and Minced Meat Rolls…
Last night, I made everyone happy at the dinner table, and now they want me to make these again tonight: it’s super simple!
These potato and minced meat rolls are incredibly delicious. No one will turn their nose up when they see them, and everyone will enjoy them with great enthusiasm. It’s a delicious and flavorful dish that will leave you satisfied and full, with no need for snacks between meals.
It’s a nutritionally complete dish, perfect for those following a healthy and balanced diet. There are eggs and minced meat that provide protein and fats, potatoes that provide carbohydrates, and peppers and onions that also provide fiber. The preparation will also make you smile, as the process is very easy, even though the cooking time takes a bit longer.
Ingredients:
- 1.5 lbs (700g) potatoes
- 10.5 oz (300g) lean minced meat
- 2 eggs
- 3 tablespoons flour
- 2 tablespoons tomato passata (puree)
- 1 red bell pepper, diced
- 1 onion, roughly chopped
- 1 garlic clove, minced
- Extra virgin olive oil
- A handful of grated light cheese (about 2 oz / 60g)
- Chopped parsley, to taste
- Paprika, to taste
- Salt and pepper, to taste
How to make Potato and Minced Meat Rolls:
- Peel the potatoes, grate them, squeeze out excess water with your hands, and place them in a large bowl.
- Add chopped parsley and eggs, mix with a spatula. Add flour, combine to form a smooth and compact mixture. Season with salt and pepper, add a drizzle of olive oil, and mix well.
- Line a baking tray with parchment paper, spread the mixture, and bake in a preheated oven at 350°F (180°C) for 25-30 minutes.
- Meanwhile, heat some olive oil in a non-stick pan. Add chopped onion, diced red pepper, and minced garlic. Cook for about 10 minutes.
- Add the minced meat, mix, then add tomato passata. Cook for 5-7 minutes, season with salt, pepper, and paprika. Stir and remove from heat.
- Remove the potato base from the oven and let it cool slightly. Cut it into six equal parts and fill each piece with a spoonful of minced meat on one side.
- Roll each piece of the potato base like a roll. Place the rolls on a lined baking tray, brush with olive oil, and sprinkle grated cheese on top.
- Bake in a preheated oven at 350°F (180°C) for 15 minutes.
