This delicious potato dish is incredibly flavorful! Boiled potatoes are coated with a pesto made from sun-dried tomatoes, olives, shallots, and other ingredients, creating a mouthwatering combination.
Ingredients:
- 2.2 lbs (1 kg) potatoes
- 6.3 oz (180 g) sun-dried tomatoes in oil
- 1 oz (30 g) pitted olives
- 1 shallot
- 2.1 oz (60 g) grated pecorino cheese
- Fresh parsley
- Fresh rosemary
- Salt
- Black pepper
- Sweet paprika
- Dried oregano
- Breadcrumbs
- Extra virgin olive oil
How to make Potatoes with Sun-Dried Tomatoes and Olives:
- Boil the potatoes until tender (about 20 minutes).
- While the potatoes are cooking, prepare the pesto: In a food processor, combine the sun-dried tomatoes, olives, shallot,
- pecorino cheese, parsley, rosemary, salt, pepper, paprika, and oregano. Pulse until well combined.
- Once the potatoes are cooked, drain and let them cool slightly.
- Coat the potatoes with the prepared pesto mixture.
