Ingredients for Saint Orpheus’ Apple Cake:
- 5 Golden Delicious apples
- 1 pear
- 120ml (1/2 cup) organic sunflower oil
- 70g (1/2 cup) all-purpose flour
- 90g (1/3 cup + 2 tbsp) granulated sugar
- 3 large eggs
- 130g (1 cup) raisins
- 1 tsp baking powder
- Ground cinnamon, to taste
- Powdered sugar, for dusting
- Lemon juice, as needed (to prevent fruit from browning)
How to prepare Saint Orpheus’ Apple Cake:
- Begin the preparation of St. Orpheus apple pie by peeling apples and pear and cutting them into cubes. Drizzle the fruit with lemon juice to keep it from blackening. Soak the raisins in a bowl.
- Crack the eggs into a bowl and beat them with the sugar for at least 5 minutes, until the mixture is light and fluffy. Use an electric beater.
- Still with the beater running, add the oil, flour sifted with baking powder and cinnamon powder.
- Add the apples and raisins, mix well with a spatula.
- Pour the mixture into an oiled and floured baking pan, level it well. Bake the cake in a preheated statisco oven at 170°C (340°F) for 1 hour.
- Let the cake cool well before unmolding it onto a serving plate, dust with powdered sugar and serve!
