Soft Coffee Biscuits : Delicious and Really Easy to Make…
Soft Coffee Biscuits are yummy treats that are quick and easy to make! Just mix all the ingredients in one bowl and without the use of a rolling pin you will be able to shape the cookies with just your hands! By dipping them in sugar before baking they will be very crumbly on the outside and beautiful to look at. The inside will be soft, and the cookies will melt in your mouth releasing all the rich and unique taste of coffee. Make these homemade cookies in abundance, they will be perfect to eat for breakfast or to serve with a cup of coffee at any time of the day! They will stay soft for a long time and retain their typical aroma just as freshly baked.
Ingredients (for 30 biscuits/cookies):
- 60 ml (4 tbsp) Room temperature coffee
- 370 g (3 cups) Plain flour
- 120 g (½ cup + 1 tbsp) Caster sugar
- 120 g (½ cup) Softened butter
- 1 Egg yolk (from a medium egg)
- 1 Whole medium egg
- 6 g (1½ tsp) Baking powder
For decoration:
- Granulated sugar, as needed
- Icing sugar, as needed
How to prepare Soft Coffee Cookies
- To prepare the soft coffee cookies as first thing put the soft butter in a bowl together with the sugar. With a wooden spoon work it all until you have obtained a soft and creamy mixture.
- Add the egg first, then mix again and when it is absorbed add the yolk as well. Mix again and add the lukewarm coffee.
- Incorporate it into the rest of the ingredients and add the flour. Stir again to allow the flour to be absorbed.
- Finally add the yeast 10 and mix one last time. Cover with plastic wrap and let rest in the refrigerator for half an hour.
- Then take the dough again and from it make balls the size of a walnut. Dip them first in caster sugar and then in powdered sugar.
- Arrange them as you go on a baking sheet lined with parchment paper, spacing them apart. You will get about 30. Then bake in a static oven preheated to 160°C (325°F) for 15 minutes. After this time has elapsed, take them out of the oven and let them cool before transferring them to a serving dish.
