Ingredients:

  • 1 sheet of puff pastry (rectangular)
  • 100g (3.5 oz) speck (smoked cured ham)
  • 100g (3.5 oz) provola cheese slices (or substitute with a mild, melting cheese like mozzarella or provolone)
  • 1 small potato
  • 30g (1 oz) Parmigiano Reggiano (Parmesan cheese)
  • Extra virgin olive oil

How to make Speck and Potato Puff Pastry Tart:

1.Preparing the Potato

  • Peel and Slice: Peel the potato and slice it very thinly using a mandoline slicer.

2. Preparing the Puff Pastry

  • Unroll the Pastry: Unroll the rectangular sheet of puff pastry and keep the parchment paper it comes with.
  • Fold the Edges: Fold the edges of the puff pastry inward by approximately one centimeter.
  • Poke with Fork: Prick the entire base of the puff pastry with the tines of a fork, leaving the folded edge untouched.

3. Assembling the Speck and Potato Puff Pastry:

  • Layer the Provola: Place the provola cheese slices on the puff pastry, slightly overlapping each other.
  • Add Speck and Potatoes: Lay the slices of speck on top, followed by the thinly sliced potato.
  • Top with Parmesan and Oil: Sprinkle the entire surface generously with grated Parmesan cheese and drizzle with extra virgin olive oil.

4. Baking

  • Bake: Bake the speck and potato puff pastry in a preheated fan-assisted oven at 200°C (390°F) for approximately 25 minutes, or until the edges are golden and the Parmesan has turned golden and crispy.
  • Serve: Remove from the oven and serve the speck and potato puff pastry hot, warm, or cold, cut into pieces.
