Ingredients:
- 3 bell peppers
- 6 eggs
- 3 tablespoons grated Parmesan cheese
- 3.5 oz (100g) diced ham
- 1 tomato, diced
- 1 shallot, minced
- 1 tablespoon mascarpone cheese
- Salt and pepper to taste
How to make stuffed bell peppers:
- First, wash the bell peppers, dry them, cut them in half, clean out the seeds and inner membranes, and set them aside.
- Crack the eggs into a bowl, add the mascarpone, salt, pepper, and grated Parmesan cheese, and whisk by hand.
- Now add the diced tomato, minced shallot, and diced ham, then mix to combine all ingredients.
- Place the pepper halves cut-side up in a baking dish with about 1/4 inch of water. Fill each pepper generously with a spoonful of the mixture.
