Sweet Potato Pancakes : Easy-Peasy…
We have tried the most classic pancakes and the more unusual ones, such as banana pancakes, and we have fallen in love with them every time. Maybe it’s because of their softness or because we like to flood them with maple syrup, watch the mouthwatering drizzle and enjoy all their sweetness…
Ingredients (for 8 pancakes):
- 200g (7 oz or about 1 cup mashed) sweet potatoes
- 240g (about 4 medium) eggs
- 80g (1/3 cup) whole milk
- 50g (1/4 cup) sugar
- 8g (2 teaspoons) baking powder
- 200g (1 2/3 cups) all-purpose flour
For greasing the pan:
- Butter, as needed
To serve:
- 100g (3.5 oz) sweet bacon
- Maple syrup, to taste

How to make Sweet Potato Pancakes
- To prepare sweet potato pancakes as first thing, boil the sweet potato for about 20 minutes, or until it is soft. Then drain it and peel it.
- In a bowl, pour the eggs together with the milk, add the cooked sweet potato and whisk with an immersion blender
- until the mixture is smooth and lump-free. Then also add the sugar, baking powder
- and the flour. Blend again with the mixer until you have a thick, smooth mixture.
- Grease a nonstick frying pan with a little butter and heat it on the stove. As soon as it is hot pour in a small ladleful of dough, it will expand on its own creating the classic pancake shape.
- As soon as small bubbles appear on the surface it means it is time to flip the pancakes. Cook them on the other side as well until they are golden brown underneath. And then gradually move the pancakes you are cooking to a serving plate.
- As soon as you have cooked your pancakes, lightly clean the pan and put it back on the heat. Lay the bacon slices on top and cook them until crispy, turning them occasionally. Once the bacon is crispy, shred it with a knife and serve the sweet potato pancakes with maple syrup and crispy bacon or with whatever toppings you like best!
