Ingredients:
- 4 cucumbers
- 2 zucchini
- 1 red onion, sliced
- 50 g (1.8 oz) ginger (with skin)
- 3 eggs
- 2 teaspoons salt + extra to taste
- 1 tablespoon extra virgin olive oil
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 bunch spring onions
- Black pepper to taste

- First, trim the zucchini, cut them into rounds, place them in a bowl, season with 1 teaspoon salt and mix them with your hands.
- Now place the eggs in a small pan, cover them with water, season with 1 teaspoon salt, close with the lid and cook for 15 minutes to make them hard-boiled.
- Weigh 50 g of ginger with all the peel, then remove it with a knife and keep aside for a moment.
- Now pour a tablespoon of butter into a nonstick pan, add the cleaned and chopped ginger, add the sliced onion, stir and let it brown.
- Transfer the onion and ginger to a bowl, integrate the chopped spring onions, sliced cucumbers and zucchini (after squeezing them out of their water).
- Finally season with 1 tablespoon of evo oil, the pepper and paprika, mix well, plate the salad, garnish it with the sliced hard-boiled eggs and bring to the table accompanied with a few slices of whole-wheat or protein bread.
