To whet the appetite of the whole family, while avoiding the risk of disappointing anyone, you must try this zucchini (courgette) bake. An extremely delicious, tasty, and satisfying dish that will win over even the children.

This zucchini bake, with the addition of potatoes and onion, is a delicious and versatile dish that offers several nutritional benefits. Zucchini are low in calories and high in water content, making them an excellent choice for those looking to maintain or lose weight. They contain vitamins A and C, potassium, and folate, which are important for immune system health and skin. They are also a good source of fiber, which aids digestion and helps control blood sugar levels.

Ingredients:

  • 2 zucchini (courgettes)
  • 1 medium potato, peeled and grated
  • 1 onion, minced
  • 1 cup (120g) all-purpose flour
  • 4 eggs
  • 1/3 cup (100ml) milk
  • 1/4 cup (60ml) extra virgin olive oil + extra for greasing
  • 2 tablespoons grated Parmesan cheese + 2 tablespoons for topping
  • 2 1/2 teaspoons (11g) baking powder
  • 1 teaspoon sugar
  • A few tablespoons of light or high-protein cream cheese
  • Salt and pepper to taste

How to make Zucchini and Potato Bake:

  1. Trim the ends of the zucchini, slice them using a mandoline, and transfer to a non-stick pan greased with a drizzle of olive oil.
  2. Season the zucchini with salt and pepper, mix, cover with a lid, and let them cook for 2 minutes on low heat. Turn off the heat and set aside.
  3. In a bowl, beat the eggs with salt and sugar. Add 1/4 cup (60ml) of olive oil and mix well. Incorporate the milk, then add the flour and baking powder (sifted) and mix until you have a smooth batter.
  4. Fold in the grated potato (squeezed to remove excess water) and minced onion. Add the zucchini and 2 tablespoons of grated Parmesan cheese and mix well.
  5. Pour the mixture into a glass loaf pan, level it, distribute spoonfuls of cream cheese on top, and sprinkle with grated Parmesan cheese.
  6. Bake in a preheated oven at 350°F (180°C) for 40-45 minutes. Once done, let the bake settle for a moment before serving.
