Zucchini Bake is an irresistible dish in appearance and taste but also very simple to make.

The zucchini will be embellished with a mouthwatering breadcrumb coating that will form an irresistible golden crust when baked in the oven. They will hold a stringy and flavorful filling inside.

With just a few simple steps you will obtain a real riot of flavors, encased in a layered delight to be enjoyed, bite after bite, in an enveloping alternation of textures and flavors.

The creamy robiola cheese will marry perfectly with the sweetness of the zucchini and the sharp, smoky flavor of the speck.

Ingredients :

For the Zucchini Bake:

  • 1 kg (2.2 lbs) zucchini:
  • 4 tablespoons breadcrumbs (plus extra for topping)
  • 4 tablespoons grated Parmesan cheese (plus extra for topping)
  • 70 g (2.5 oz) thinly sliced speck (Italian cured ham)
  • 180 g (6.3 oz) scamorza cheese (or pizza mozzarella)
  • Extra virgin olive oil, as needed
  • Salt, to taste

For the Robiola Cream:

  • 200 g (7 oz) robiola cheese (or cream cheese)
  • 150 ml (2/3 cup) milk

How to Zucchini Bake with Speck and Robiola Cheese:

  1. Prepare ingredients: zucchini, speck, robiola cheese, milk, breadcrumbs, Parmigiano cheese, scamorza cheese, oil, and salt.
  2. Brown speck slices in a greased skillet until crispy, then set aside.
  3. In a saucepan, mix robiola cheese with milk over low heat until it forms a smooth cream.
  4. Wash, dry, and thinly slice zucchini lengthwise using a potato peeler or mandoline.
  5. In a bowl, season zucchini slices with oil, salt, breadcrumbs, and Parmigiano. Mix well and let stand for 20 minutes.
  6. Preheat oven to 375°F (190°C).
  7. Grease a 24 x 18 cm rectangular baking dish with oil.
  8. Arrange the first layer of zucchini slices vertically, slightly overlapping.
  9. Drizzle with robiola cream, crumbled speck, and finely chopped scamorza cheese.
  10. Add a second layer of zucchini, arranged horizontally.
  11. Repeat steps 9 and 10 until you have four alternating layers.
  12. For each layer, press gently with your hands to compact the ingredients.
  13. On the final layer, sprinkle breadcrumbs, grated cheese, and scamorza cheese.
  14. Drizzle the surface with a little oil.
  15. Bake in the preheated oven for about 25 minutes.
  16. If needed, finish with a few minutes of grilling to achieve a golden crust.
  17. Remove from oven when a delicious golden crust has formed.
  18. Let the zucchini flan cool slightly before serving.
  19. Serve warm or at room temperature.
