Zucchini (Courgette) Casserole: A Tasty Recipe You Can Enjoy Even on a Diet…

The endless variety of zucchini (courgette) recipes is enriched with another small piece in the grand mosaic. In this article, we discuss the zucchini (courgette) casserole, almost reminiscent of the more famous potato casserole, but with the intention of making it lighter and guilt-free. After all, the name of this site says a lot about the types of recipes you can find here, as the declared mission is to help people on low-calorie diets. Being on a diet might seem frustrating and depressing, but fortunately, there are thousands of recipes created daily by nutritionists and dietitians that allow for varied, tasty, and fun eating while keeping calories under control.

With this zucchini (courgette) casserole, you can satisfy the rest of your family who aren’t on a diet, including children, because it’s certainly a classic of Italian cuisine, baked in the oven and flavored with provolone or smoked scamorza cheese. Fresh mozzarella is not recommended, as it would produce excessive liquid during cooking. If you really want to use it, leave it in the fridge overnight to dry out.

Ingredients:

  • 21 oz (600g) zucchini (courgettes)
  • 2.5 oz (70g) provolone (or smoked scamorza)
  • 1.8 oz (50g) grated cheese (Grana Padano or Parmesan)
  • 1.8 oz (50g) cooked ham
  • 1 oz (30g) breadcrumbs
  • 1 egg
  • 2 tablespoons extra virgin olive oil
  • 1 clove of garlic
  • Salt and pepper to taste

How to make Zucchini Casserole:

  1. Preheat the oven to 350°F (180°C/160°C fan).
  2. Wash and dry the zucchini (courgettes), then grate them finely using a large-holed grater.
  3. Heat the oil in a large pan, add the grated zucchini (courgettes), and sauté for at least 15 minutes. Season with salt and pepper, remove the garlic, and let cool.
  4. While the zucchini (courgettes) cool, dice the provolone and cooked ham.
  5. Mix the zucchini (courgettes) with Parmesan and breadcrumbs, adjusting salt and pepper if necessary.
  6. Sprinkle some breadcrumbs in a baking dish, then add half of the zucchini (courgette) mixture.
  7. Arrange the provolone and ham on the zucchini (courgette) base, then add the remaining zucchini (courgettes).
  8. Sprinkle with more breadcrumbs and bake in the preheated oven for 40 minutes.
  9. Remove from the oven and serve the casserole warm or cold, as you prefer.
