Ingredients:

  • 2 zucchini
  • 1 egg
  • 3.5 oz (100g) grated light cheese (such as mild cheddar) + extra for topping
  • 3.5 oz (100g) light cream cheese or high-protein soft cheese
  • 1.75 oz (50g) chopped basil leaves + extra whole leaves
  • A few tablespoons of tomato sauce
  • Salt to taste

How to make Zucchini Rolls:

  1. Thinly slice the zucchini lengthwise using a vegetable peeler. Set aside on a cutting board.
  2. In a small bowl, mix the grated cheese, chopped basil, cream cheese, and egg. Stir to create a compact mixture. Season with salt and mix again.
  3. Lay out 7-8 zucchini slices lengthwise on your work surface, slightly overlapping each other.
  4. Place some filling at one end of the zucchini slices, then roll them up together.
  5. Place the roll in a glass baking dish containing a few tablespoons of tomato sauce and some whole basil leaves on the bottom.
  6. Repeat until all ingredients are used.
  7. Sprinkle extra grated cheese on top of the rolls.
  8. Bake in a preheated oven at 350°F (180°C) for 1 hour.
